DIRK'S LEMON AND RICE SOUP

4 c chicken broth

1 can cream of chicken soup

1 can water

4 TBSP lemon juice (more or less to taste)

1 cup rice (uncooked)

1 chicken, boiled, skinned and boned

1 small onion diced

Boil chicken until falling off bones. Remove chicken from pan, reserving broth. Remove bones and skin from chicken. Dice chicken meat and return to broth. Add rice, onion, cream of chicken soup, lemon juice and additional water. Bring to a boil, then simmer until rice is fully cooked. Add salt and pepper to taste.
